Blue Cheese Cocktail Crackers Recipe
I recently made these crackers for a progressive dinner and they were a complete success! I chose to increase the cayenne pepper to 3/4 teaspoons for a little more of a "kick".

Prep and Cook Time: about 35 minutes.
Yield: Makes about 4 dozen crackers

Ingredients
1/2 cup cream cheese, at room temperature
1 cup butter, at room temperature
1/4 teaspoon cayenne pepper
1 1/2 cups crumbled blue cheese
2 cups all-purpose flour
2 cups crisp rice cereal, such as Rice Krispies
2 slices bacon, cooked and crumbled (optional)
Preparation
1. Preheat oven to 350°. With a mixer on medium speed, cream together cream chee
se and butter until light and fluffy. Add cayenne, blue cheese, flour, rice cereal, and bacon (if using) and beat on medium-low speed until well blended. The dough will be stiff.
2. Roll 1-tablespoon portions into balls and place slightly apart on baking sheets. Flatten each ball with a fork.
3. Bake until crackers are golden brown, 12 to 15 minutes.

Interesting Fact - Why Clocks are set at 10:10

Have you ever wondered why clocks that are for sale are set at 10:10? It's nothing as mysterious as the myth of the exact time of death of Lincoln, JFK and Martin Luther King (as rumored). Quite simply... a clock set at 10:10 allows the brand logo of the clock to be seen easily, any pendulum on the bottom will be clearly visible, and psychologically, a clock set at 10:10 looks as though it is smiling.

Summer in Bend / July 2009

A Note from Joe

WOW !! 2009 is half over. It's certainly hard to believe. As we head into the second half of the year we should take a couple of minutes and reflect on what's happening out in the world. We started the year with declarations of the coming of the next Great Depression that forced fear into the eyes of people everywhere. As we sit here in August of 2009 we now see glimmers of Light, glimmers of Hope and a feeling of non-dread. We at AZU have spent this time in the 'Great Recession' in trying to steady the boat and keep sailing forward. We would also like to take the time in thanking our great friends and clients in supporting not only us but our neighbors. We in Bend know the value of supporting 'Local' and keeping hard earned dollars within the community - where the 'Boardroom' just happens to be our own living rooms.
We just need to remember that the sky is actually not falling.
As we move toward Fall and Winter, we have some really great stuff coming through the store and our website. Our featured product this month are SteadySticks from Australia. Excellent for those nice Summer Concerts and picnics. With SteadySticks you will never spill that nice bottle of wine into the grass again.
This issue is the first of our new newsletter and each month we will try to bring you info on great products as well as fun stuff going on in Bend and of course an excellent recipe from one of the gourmets that work at AZU.

What's Up in Bend?

Once again, the 4th of July brought everyone Downtown (with the annual Pet Parade being a huge success). The floating dog was back this year! Summerfest, the Cascade Cycling Classic and the Downtown Sidewalk Sale all filled the streets of Downtown Bend with the fun energy that reminds us why we live in Bend. Easy Key Lime Pie

Summer heat dictates cool, simple, quick and delicious treats. Here's a fun and yummy Key-Lime Pie recipe. Enjoy!

1 graham cracker crust
1 14-oz can sweetened condensed milk
1/2 cup lime juice
2 cups Cool Whip

Mix milk and lime juice until combined. Chill until set. Top with Cool Whip, either entire pie or a dollop for each slice.Recipe can easily be doubled for a fuller pie.

Now...a Yummy Summer Treat! Chocolate covered strawberries. Sweet and refreshing!



INGREDIENTS

16 ounces milk chocolate chips
2 tablespoons shortening

1 pound fresh strawberries with leaves


DIRECTIONS

1. Insert toothpicks into the tops of the strawberries.

2. In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.

3. Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.


Now...for those of us that can't seem to find the time to make these strawberries ourselves...check out Shari's Berries. These are the best dipped strawberries I've ever tasted!

While we patiently wait for the economy to shift gears, there may be some hesitation to consider changing our home environment when there's always a million other things that a few extra dollars could be saved for. My sincerest apologies for not maintaining a regular schedule of updates to the Azu Blog. Lots of "adjustments" in the City of Bend since last Summer. However, keeping a positive attitude and optimistic outlook has helped Azu continue to put "one foot in front of the other" as Joe, the Owner, likes to say. Forward motion is the only way to go!

Our blog wouldn't be complete without a fun recipe too. I'm a peanut butter fanatic and I searched the web today for a simple and easy peanut butter pie recipe. This excellent sounding Peanut Butter Chocolate Banana Cream Pie recipe was found on Cool Whip's website. Enjoy!

Peanut Butter Chocolate Banana Cream Pie

Prep Time: 30 min
Total Time: 3 hours 30 min
Makes: 10 servings, one slice each

35 NILLA Wafers, finely crushed
1/4 cup (1/2 stick) butter, melted
2 medium bananas, halved lengthwise, quartered
2 squares BAKER'S Semi-Sweet Chocolate, divided
1/2 cup peanut butter
2 cups milk
2 pkg (4 serving size each) JELL-O Vanilla Flavor Instant Pudding
2 cups thawed COOL WHIP Whipped Topping, divided
2 Tbsp PLANTERS Salted Peanuts, coarsely chopped

PREHEAT oven to 350 degrees. Mix wafer crumbs and butter until well blended; press firmly onto bottom and up side of 9-inch pie plate. Bake 5 to 8 minutes or until golden brown. Cool completely; top with bananas.

MAKE chocolate curls from 1/2 square of the chocolate; reserve for garnish. Microwave remaining chocolate and the peanut butter on HIGH 1 minute; stir until chocolate is completely melted and mixture is well blended. Drizzle over bananas; set aside. Pour milk into large bowl. Add dry pudding mixes. Beat with a wire whisk 2 minutes or until well blended. Gently stir in 1 cup whipped topping.

REFRIGERATE at least 3 hours overnight. Top with chocolate curls and peanuts just before serving. Store leftover pie refrigerator.
